Course Description: This course is designed to provide students with an opportunity to experience a real-world, professional business situation and to apply the concepts, theories, and knowledge learned in the FSM curriculum. Through this externship, students will have the opportunity to gain first-hand knowledge and participation in a professional food service environment. This experience will allow the students to interact with management and contribute to a food service business’ operation with guidance and mentorship. Students will be required to submit a written report and all necessary externship documentation demonstrating their achievement of the course learning outcomes.
